Function:
Laccase is a copper-containing polyphenol oxidase which generally exists as a dimer or tetramer. The main sources of laccase in nature are plant laccase, animal laccase, and microbial laccase. Microbial laccase is subdivided into bacterial laccase and fungal laccase. Bacterial secreted laccase is mainly from inside the cell, while fungal produced laccase is mainly distributed outside the cell, which is the more studied species at present.
Application:
It is widely used in food, textile and paper industries. Laccase has the property of oxidizing phenolic substances and converting them into polyphenol oxides, which can themselves undergo polymerization to form large particles that are removed by filter membranes. Therefore, laccase is used for clarification of beverages in beverage production. Laccase is able to catalyze phenolic compounds in grape juice and wine without affecting the color and taste of the wine. Laccase is added to the final process of beer production to remove excess reactive oxygen species and polyphenol oxides, thus extending the shelf life of the beer. Laccase can degrade anthraquinone dyes, azo dyes and triphenylmethane dyes with high decolorization rate, long-lasting activity and high utilization. Laccase can oxidize phenolic hydroxyl groups in lignin to phenoxy radicals, and the conversion between these two groups leads to good depolymerization of lignin, thus accelerating the biobleaching process in the papermaking process
