Chapter 1 Basic information about dehydroacetic acid
Synonyms: DHA;dehydrated acetic acid; dehydroacetic acid
Molecular Formula: C8H8O4
Molecular Weight: 168.15
CAS : 520-45-6
Structural Formula:

Physical Properties:
Dehydroacetic acid is a white or almost white crystalline powder or needle-like crystals at room temperature, almost odourless, or with a slight peculiar smell. Melting point 109°C to 112°C, soluble in most organic solvents, alkaline solutions; good stability when stored away from light, light may promote slow decomposition; low hygroscopicity at room temperature, may be slightly absorbent in high humidity environment.
Chemical properties:
Sodium dehydroacetate is non-toxic and can be used as preservative, antiseptic pesticide, food additives, etc.
Brief analysis of uses: Dehydroacetic acid has a strong inhibitory effect on moulds and yeasts, is a broad-spectrum preservative.Commonly used in food preservatives, preservatives. Such as meat, vegetables, fruits, beverages, pastries and other preservatives, preservatives, is a new type of broad-spectrum bacteriostatic agent.
The uses of dehydroacetic acid are diverse. According to current standards, dehydroacetic acid and its sodium salts can be used in 12 types of foods, including butter and concentrated butter, pickles, pickled vegetables, pickled mushrooms and algae, fermented soybean products, starch products, bread, pastries, pastry fillings and batters, cooked meat products, cooked meat products, compound seasonings and fruit and vegetable juices (pulp). Among the common food preservatives, sodium benzoate, calcium propionate and potassium sorbate generally exert their greatest effect in acidic environments, while sodium dehydroacetate can be used more conveniently in various environments.
Mechanism of action: It effectively penetrates into the cell body and inhibits microbial respiration, exerting the effects of preservation, anti-mold, freshness preservation and moisturizing.
Chapter 2 Main uses of dehydroacetic acid
Sodium dehydroacetate is a new generation of food preservatives after sodium benzoate, parabens and potassium sorbate. It has excellent inhibitory effects on moulds, yeasts and bacteria and is therefore widely used in the beverage, food and feed processing industries.
Due to its high safety and stability, sodium dehydroacetate strongly inhibits the growth of yeast, moulds and bacteria. It is widely used in the production of foods such as cream, soup, bread, mooncake and pastry. Generally, it does not decompose or volatilise during food processing and does not remain after ingestion into the body. It breaks down into acetic acid through metabolism.
Specific uses:
- Use of dehydroacetic acid in food
Dehydroacetic acid can be used in bread, pastries, pastry fillings, cooked meat products, ready-made meat products, pickles, fermented miso, food seasonings such as mayonnaise and salad dressings.
- Use of dehydrogenase sodium to prevent white mold in feed
By penetrating the cell wall of microorganisms and inhibiting various intracellular enzyme systems, it resists microorganisms such as bacteria, yeast and mold that are easy to grow and cause spoilage in feed, food and beverage, especially Pseudomonas aeruginosa, Staphylococcus aureus and Escherichia coli. It has excellent acid resistance, light resistance and heat resistance, is less affected by alkali, has a low effective concentration and its aqueous solution is stable. It is not affected by thermal decomposition or steam evaporation during processing, and has the effect of suppressing the increase of transcription concentration of sodium dehydrogenase against mold when acetone treatment is applied, and is expected to be used as a fungicide in feed production.
Chapter 3: Prospects for dehydroacetic acid
Market demand continues to grow: with the global economic development and consumers’ demand for higher quality products, the demand for dehydroacetic acid in downstream industries such as food, pharmaceuticals and cosmetics will continue to increase. In the food industry, there is still market space for food-grade dehydroacetic acid. In the pharmaceutical field, pharmaceutical grade dehydroacetic acid can be used to prevent microbial contamination of drugs, and its market demand will grow accordingly. In the cosmetics industry, cosmetic grade dehydroacetic acid can ensure product safety and stability, will continue to play an important role in high-end cosmetics and functional cosmetics.
Technological innovation to promote the development: technological progress will promote the dehydroacetic acid industry to more efficient, environmentally friendly and safe direction. On the one hand, the development of high-efficiency synthesis technology can achieve high-efficiency, low-energy synthesis of dehydroacetic acid, improve production efficiency and reduce production costs. On the other hand, the application of new separation and purification technologies, such as membrane separation and crystalline separation, can improve product quality to better meet market demand.
Acceleration of industry chain integration: In the future, industry chain integration in the dehydroacetic acid industry is expected to accelerate. Enterprises may strengthen their competitiveness and enhance their position in the industry chain through mergers and acquisitions and expansion of production scale.
