Function:
Antibacterial property: ε-polylysine can destroy the cell membrane structure of microorganisms and leak out intracellular substances. It can also bind to the ribosomes in microbial cells to inhibit protein synthesis, thereby exerting an antibacterial effect. It has inhibitory effects on Gram-positive bacteria, Gram-negative bacteria, yeast, mold, etc.
Safety: ε-polylysine is a natural biopolymer that can be degraded into lysine after ingestion by the human body. It is a nutrient with high food safety and is basically non-toxic and non-irritating.
Stability: It has good stability in a wide pH range (2-11) and good thermal stability. It can still maintain a certain activity under high temperature treatment, which enables it to play a role in processing under different conditions.
Film-forming property: ε-polylysine has a certain film-forming ability and can form a uniform film on the surface of an object. This film can isolate oxygen, moisture and microorganisms, thereby extending the shelf life of the protected object.
Application:
Preservatives: can be used to preserve meat, fish, vegetables, fruits, cakes and other foods, can effectively inhibit the growth of spoilage microorganisms in food and extend the shelf life of food.
Preservatives: added to cosmetics, such as lotions, creams, lotions, etc., to inhibit the growth of microorganisms in cosmetics and ensure the quality and safety of cosmetics.
Water treatment: can be used in the field of water treatment, by adsorbing and killing microorganisms in water, it plays a role in purifying water and improving water quality.
Biological pesticides: can be used to prevent and control crop diseases and insect pests, have an inhibitory effect on some plant pathogens, reduce the use of pesticides, and reduce pollution to the environment.
